Happy Spring!

To say this year hasn’t been “special” is definitely an understatement, but I have faith that we will emerge and we will rebuild. The flowers are starting to bloom, the grass is getting greener and Spring is showing it’s dewy head!

With the Easter holiday coming up this weekend, it is sure to be a little different than previous years. I, for example, will not be able to spend it with my family which will be the first time in my 33 years of living that I’ve missed a holiday with them. And I’m sure there are many of you out there in a similar situation as myself.

While we may be quarantined, it doesn’t mean we can’t have a special holiday meal! I’ve rounded up two menus of healthy and delicious Easter recipes that you can whip up this weekend in style. Bon Appétit!

Berry Spinach Salad by Downshiftology

A vibrant and refreshing combination paired with a sweet and tangy raspberry vinaigrette. Added bonus...it takes only 5 min to make!

Asparagus is a staple for Spring cooking and is packed with vitamins such as Vitamin E, an antioxidant that helps strengthen your immune system.

Orange Glazed Salmon by Downshiftology

This recipe is loaded with healthy fats and an abundance of protein. If you do not have arrowroot powder you can substitute cornstarch.

There's something so refreshing about ending a meal with bright citrus flavors. These little morsels will cleanse your palate and add just enough sweetness to round out your meal.

Rosemary Grilled Lamb Chops by Downshiftology

Recipe by NY Times Cooking

Cilantro, Dill, Mint and Tarragon, oh my! So many fresh flavors in this salad paired with the spicy bite of radishes and salty creaminess of feta.

Instead of lathering our potatoes in mayo, this year we're roasting these garlicky beauties to a crispy finish.

It's no secret that lamb is a popular choice for Easter meals, and with the weather getting warmer here in New England why not fire up the grill! While we're at it, it's time to say goodbye to store bought mint jelly and blend up a topping you'll want to spoon directly into your mouth.

Greek Yogurt Carrot Cake by iFOODreal

Recipe by iFOODreal

It's ok to have your cake and eat it too! I’m not one to use the “m-word” but if you are looking for a moist carrot cake recipe, look no further. With this Greek yogurt topping, you still get the tangy-ness of a cream cheese frosting without the added saturated fats.
